Well stroker kits are amazing, produce a lot of low end torque. Which is healthy for your 0-60 ft times as long as you can plant it.
Unfortunately i do not know enough about ford motors to tell you anything more than that. Im sure someone on here does though. Good luck to you!
Note: I would not try to take a 289 to a 351, it just seems like you would be boring too much over to achieve that kind of displacement.
